How exactly does difficulty work?

I'd like to ask what is the exact impact of difficulty. Does it only modify the difficulty of combat? It would be logical if it modified for example food and torch decay but I read no mention about it.

Monsters move slower and do less damage on easy and faster/more damage on hard.
