I was thinking you can, but you can't
You only play Toorum as he is/was when he was alive, meaning new Class but you can not customize it.

The one man party in question is entirely possible even if you haven't finished the game.
This I know for a fact because I haven't finished the game and I'm doing it right now. However, since this could be considered an exploit and since it's just boring to be handed the solution, I'll keep my mouth shut.
By reading this whole thread, it is however extremely easy to guess.

There are no Toorum notes. Everything else appears to be the same. I'm on level 6.
The dreams are also the same.

Wait until you get to level 10 and it locks you in that room. Game over.

After finishing the game,
...the ending sequence is the same
Also, you don't get trapped in that room.
Gonna take a big break from Grimrock now.
